For Maurín Arellano, working with small Quebec farmers is a matter of principle. This approach allows her to limit her environmental footprint while offering internationally-inspired, seasonal menus made with great quality products. Maurín opened a catering company for 10 years and  also owned la Centrale Culinaire, the first collaborative kitchen in Montreal, and is involved in the Women's Chef Association of Montreal, A Taste For Grain, the Récolte collective, Gardiens des semences and several other organizations in the Montreal food system. 

Having travelled across Canada as a manager in the not-so-sustainable and rather industrial restaurant industry, Maurín discovered the magnificent public markets of Montreal and the amazing local farms of the region soon after she arrived here in 2012. She was immediately inspired to create her company, serving sustainable and healthy home meals. She made connections with the best artisans and small farmers in the area. Today, Restaurant Vivace offers a full catering service for businesses and individuals as well as cooking workshops.
